Fry bread isn’t a difficult concept to explain—it’s like a big taco, but the shell is puffy and a little more dense. It’s almost the consistency of a beignet, but in the shape and size of naan, and arguably better than both. Fry Bread House—again, arguably—makes the best fry bread in town, and is definitely worth a stop if you’re in the area (or are just craving it… it happens). And don’t forget to get some stew, because the stew is surprisingly awesome. Maybe “surprisingly” is the wrong word—you don’t get James Beard Awards without people kind of knowing everything will be awesome.

The combination of golden fried dough and a "secret recipe" chocolate sauce, a creation O'odham says comes from his mom, is reminiscent of a perfect day at the state fair, but with better ingredients. Best to share with a friend or two.

Green Chili Fry Bread
Novices might do best with the green chili -- milder and less chunky than the red, but comfortably spicy on its own. Forget taking this taco to-go. It may be shaped like a taco, but you'll quickly realize it wasn't meant to be handled as such, so you'll be needing a fork and knife to do most of the work.
