Barcoa Agaveria Has the Tequila You’re Looking For
One thing that makes me light up is places with focus. Don’t just open an art supply store; open a pencil shop. Don’t cover broad swaths of Italian cuisine; pick a tiny cultural pocket and go crazy. So here’s Barcoa Agaveria with an intense focus on agave spirits. You get tequila, you get mezcal, you get bacanora, and you get sotol (which isn’t agave, but still in the ballpark). Upstairs is a casual bar with your margaritas, Palomas, and micheladas, and downstairs is a serious drinking situation with infusions, branded ice, and mood lighting. I think the downstairs spot is more for me, but I appreciate options.

Leche de Pistachio
David Tyda, who opened Barcoa with co-owner Jourdain Blanchette last winter, likens it to a smoky slice of pistachio cake. Cool and creamy, sweet and nutty, tangy and smoky, this balanced sipper uses a meaty mezcal called El Silencio Espadín. For further edification, Tyda recommends ordering a half-pour of the spirit alone – to appreciate what the mixologist started with and where he landed. It’s educational!
